This Carlisle Coldmaster CoolCheck food pan maintains food temperatures at or below the National Restaurant Association recommendation of 40 degrees F for up to six to eight hours and switches from blue to white when temperatures become unsafe. It is constructed of ABS (acrylonitrile butadiene styrene) plastic, which is stiff, resistant to impact and abrasion, heat resistant, and unaffected by water, salts, most inorganic acids, food acids, and cleaning solutions.The pan features an inner and outer shell, as well as a non-toxic refrigerant gel within that, when frozen overnight, receives a cold "charge," changing its color from white to blue and eliminating the need for ice. When the charge is lost, the pan turns from blue to white, signaling that the food temperature has reached a hazardous level. The pan fits in conventional food pan shapes. It has a capacity of 1.6 quarts, is dishwasher safe, and measures 6.88 x 6.25 x 5.91 inches (L x W x H). The lid is not included.
