The angle must be exact, uniform from bolster to tip and the curve flawlessly tapered. The blade is Rockwell tested to ensure that it's tempered and hardened to perfection. The Scanpan Classic Carving Knife is excellent for controlled uniform slicing of fare such as leg of lamb, ham, turkey and other cooked meats.
