Il Pleut Sur La Seine: Recipe Collection for French Confectionery

This is a recipe collection from the confectionery class (Honka course) affiliated with Il Pleut Sur La Seine, a famous French confectionery shop located in Daikanyama Hillside Terrace, where I attended about 30 years ago.
I spent about 1 million yen at the time and learned directly from the late Chef Yumida, who was perfectly described as a genius.

The recipes, which involved making 2-4 items at a time, were quite numerous, and I learned how to make all the sweets sold in the shop over a total of 40 sessions.
Not only are the recipes included, but also detailed instructions and technical points are meticulously described.

The taste was incomparably delicious compared to the pastry course of a prestigious French culinary school on the same street.
The methods and ingredients were incredibly precise and particular, and I believe it reflected Chef Yumida's personality, who was also a very approachable person.

I'd like to say that all 40 sessions' worth of recipes are included, but I'm missing only one session, which included entremets glacés, sorbets, and crêpes.
