"Steam pot cookery is a method of food preparation as old as The Great Wall of China itself. In China, this pot is called a Yunnan Pot and is exclusively used to prepare a famous steamed chicken dish.

"The steam pot is a covered vessel that is distinguished by a funnel-shaped interior chimney. This hard-fired, unglazed clay pot uses small amounts of continuous steam and condensation as the source of heat and moisture for cooking. The steam pot 'breathes' during the cooking process and allows the steam, heat and moisture to properly penetrate into the pot.

"No added fats, oils or liquids are required. Foods slow-cook in their own juices, creating deeply flavorful dishes.
